[Making sweets from one egg]

When you want to make sweets, but don't have the ingredients...
I sometimes think that.
We will introduce you to a sweet treat that can be made with just one egg and a small amount of ingredients.

Made with the same ingredients as Savoy Biscuits.

Victoria cake style

Ingredients: (12cm diameter sponge cake mold)

Egg yolk : 1 egg
Egg white : 1 piece
Granulated sugar : 40g
Cake flour : 15g
Cornstarch : 15g
Vanilla extract (optional) : appropriate amount

Lacson's Raspberry and Lemon Jam : as needed

[How to make]

1. Add half the amount of granulated sugar to the egg yolks and whisk until pale and thick.
2. Whisk the egg whites and gradually add half the amount of granulated sugar to make a meringue that forms stiff peaks.
3. Sift together the flour and cornstarch and mix into 1.
4. Add 1/3 of the meringue from step 2 to step 3 and mix well, then add the remaining meringue in several batches, being careful not to crush the bubbles.
5. Mix in vanilla extract if desired.
6. Pour into a 12cm sponge cake mold and bake in an oven at 180°C for 25 minutes.
7. After baking, immediately remove from the mold and place on a cake cooler to cool.
8. Slice in half, spread with your desired amount of jam, cover with one half, sprinkle with powdered sugar and you're done!
