#12 - French Cookies: Sablés
When people hear the word "sable" in a book, they probably think of the popular Kamakura souvenir, Hato Sable, or the coconut sable you can always find in the candy section of a supermarket .
In France, sablés are a snack that everyone has eaten as a child.
Cookies? Biscuits? Sables?
You might be thinking, "They all look the same!"
In fact, each one has a different history, recipe, texture, and appearance.

The familiar "cookies" are baked goods that are said to have been introduced from America. The definition of a cookie set by the National Biscuit Fair Trade Council is "a biscuit that has a homemade appearance and contains 40 % or more of the total sugar and fat content of its ingredients."
In America, the birthplace of cookies, the term "cookies" is used to refer to any crispy baked goods. The word "cookies" apparently comes from the Dutch word " koek ," which means "cake or baked goods."

In the UK, biscuits are a general term for baked goods made from wheat flour. The word apparently originated from bread that was baked twice as a preserved food and had a long shelf life. In Japan, a biscuit is defined as one that contains less than 40 % sugar and fat. They often contain baking powder to give them a slightly fluffy texture.
In America, fluffy bread-like sweets are called "biscuits."
The word "biscuit" comes from the Latin "bis coctus," which means twice- baked bread. It is said that biscuits were introduced to Japan by the Portuguese in 1543 .
・Sable
Sables are a sweet that originated in France. They contain about twice as much butter as cookies or biscuits and no baking powder, giving them a light, crispy texture. There are several theories about the origin of sables. One is that it began when a confectioner in the small village of Sable near Brittany made round sweets using plenty of butter. The other is that it began when Madame de Sable made round, crispy sweets for King Louis XIV.
